What is the difference between a HD AV cable and an HDMI cable for xbox 360?

Im looking at the different xbox 360 packages at this page; http://www.xbox.com/en-US/hardware/compare101.htm
I am wondering what the difference is between the standard/HD cable (with the 360) and the HDMI output (with the elite)
I have a 37″ samsung TV – so am looking to view it in HD.

    the hd and av cables are the plugs you have to have to play your xbox in hd or regular tv form when you have the xbox in hd it will automatically got to 720p thats where the hdmi cable is for to have your xbox at 1080p the highest resolution you can have
